Banana bread is so delicious that it really doesn't need anything added to it, right? Well, yes, we would argue that you really don’t need to add anything to banana bread to make it taste better. But why not have some fun anyway? Here at Simple Mills, we love to get creative. We were talking about how much we love coconut flakes the other day in the office and the conversation inspired me to whip up this delicious bread (and not share it with the team – it was too good, my roommates and I ate it all).

Naturally, we want to share these creations, but we want to inspire you to get creative, too! We’d like to invite you to think about what you might add to your favorite Simple Mills mix to get that extra zing—maybe a little orange zest sprinkled into our chocolate chip cookie mix or some fresh chopped rosemary in our focaccia bread. Let us know what you come up with and send some pictures, too!

In the meantime, we highly recommend trying out our recipe for Chocolate Chip Coconut Banana Bread. Actually, we think you may want to make two—one for you and one to bring to a friend (or maybe just keep both for yourself – we won’t tell).

 

 

Chocolate Chip Coconut Banana Bread

Simple Mills Banana Muffin Mix

1 egg

1 Tbsp coconut oil

2/3 cup water

½ tsp vanilla

½ cup coconut flakes

1/3 cup unsweetened chocolate chips

 --

Preheat the oven to 350 degrees.

Whisk together the egg, coconut oil, water and vanilla in a large mixing bowl. Then add in 1 package of Simple Mills Banana Muffin Mix and combine.  

Once you have a somewhat thin liquid batter (you may need to add a few tablespoons of extra water), mix in the chocolate chips. If you happen to love chocolate, who am I to tell you not to add a little bit extra?

Gently fold in the coconut flakes and then bake.

After 20 minutes, sprinkle a few coconut flakes on top of your loaf and bake for another 10 minutes.

Let cool and promptly relish in the amazingness that is this recipe.
